Sometimes, when dinner is hours away and you feel those hunger pangs, you need a little something to tide you over. Or maybe you want to add a little decadence to round out a simple meal. When you’re super hungry or your family/guests are circling like vultures when dinner is hours away, there’s one thing that’s sure to be loved by everyone, is super simple, and goes with a ton of different meals: garlic bread!
There are a few little-known tricks to making garlic bread that will put yours miles ahead of the rest. All in all, you can throw this together in about 15 minutes as an offering to the gods of hunger, or maybe as an afterthought to a delicious pasta meal like my Campanelle with Chicken and Mushrooms: a few pieces of deliciously buttery, cheesy garlic bread along with a glass (or 4) of wine and you can get back to the good stuff – enjoying your time with friends and family!

Sometimes you just gotta have pasta. While I haven’t been a huge pasta fan, I discovered vodka sauce a while back and started to understand what all the fuss was about. I’m not ashamed to admit it: if you add alcohol to it, I’ll probably love anything. With this quick little recipe I cooked up (no pun intended) you’re sure to love it too!

Comfort food – it’s called that for a reason. Macaroni and cheese is a childhood staple that, when altered correctly, can satisfy all those blue-boxed memories with some grownup flair: adding chicken wings makes the meal stay kid friendly while being a little more well-rounded for us kids-at-heart. You won’t even have to hide the box when company comes over – and they will once they smell what’s cookin’.

Anyone who knows me well knows I am not a huge fan of Italian food. I’ve never been a big pasta lover and usually the flavors and foods are way too heavy for my liking. When trying to think of something to cook for dinner, my mom mentioned that she had been craving chicken marsala. I’d never had it and immediately turned up my nose at the idea, but being the wonderful daughter that I am (har har…) I figured I would give it a shot. I researched a few recipes and then came up with my own that – not to toot my own horn – was pretty freakin’ fantabulous. Definitely something I will make again… and this time I’ll make sure to make about twice as much because there were NO leftovers.

Last night I decided I felt like a lighter meal since my stomach has kind of been off lately. I have a few favorite lighter meals, like the shrimp baguettes I posted a few days ago, but I wanted something delicious and chicken-y. I decided on a super simple but super delicious recipe. I woke up today feeling very hungry and craving something meaty and filling. Unfortunately, I don’t have the ingredients to make one of my staples… so I’ll just blog about it instead and drool over old photos! This is one of my favorite simple preparations of chicken that is spectacular. It’s definitely not low-fat, though, so if you’re calorie counting you might want to skip this one.
